I came home last nite late and thought, as we do, what to cook??! Well I looked in the fridge & found chicken thighs (great flavour) carrots, spuds, onions, chicken stock & leftover peas. I just threw them all together with some seasoning and hey presto... a wonderful simple & fast food to cook in the microwave, if u have one, or in the oven.

My mother's recipe. It's a simple bake dish, great for kids but I also love it! I like to serve it with good sundried tomato or olive bread. You can also use pepperoni or other sausage.
