Basic pesto, made with Italian basil, olive oil, pine nuts, and Parmesan cheese. This recipe differs from the classic preparation by the addition of parsley. You can add a little extra Parmesan to the mixture if you like.

A great way to start your Italian meal! I usually serve it with crusty bread slices that have been toasted in the oven until crisp for dipping into the marinade. Keeps for a week in the refrigerator and the longer it stands the better it gets!

Great salad dressing for all salads. This recipe makes a large amount and you can store the dressing in the fridge.

A zesty lime dressing with a distinctive Asian flavor with hints of kaffir lime, chilli, and coriander. This is great with a cold chicken salad, with Asian greens. Change the ratios for preferential taste.

This is a real crowd pleaser. You can add your own favourite spices, herbs or veggies to this, to your taste. Serve with mashed potatoes and cooked greens if desired. Voila, a classic gourmet chicken dinner in under an hour! (Note: you can use white chicken meat, but be careful not to overcook it - 35 minutes tops, or it will dry out!)

This Italian dressing mix is a combination of eight pungent herbs. Keep in an airtight jar and mix a few tablespoons with olive oil and vinegar when ready to serve.

Infinitely better than buying it in a jar, this is a quick and authentic garam masala spice mix. Garam masala is best when made with whole spices that have been roasted and ground, but this is a quick and easy substitute that comes a close second.

An Italian friend of mine had an Italian restaurant and used this recipe for over 30 years. When he retired, he graciously consented to passing it on to me. I will share it with you. It is excellent as meatballs, in spaghetti sauce, hamburger patties, or on pizza. This Recipe was prized by him and revered by many. We are lucky to have gotten this Recipe.
