Mee Suah Soup with Egg

    This is one of our favorite soups. We usually have it for dinner with rice. Mee suah and rice goes surprisingly well!

    • 1000ml water
    • A handful of big ikan bilis
    • 2 eggs, beaten
    • 25g dried prawn
    • A pinch of salt
    • 2 tbsp oil
    • 5 slices ginger
    • 100g mee suah
    • 2 stalks Chinese parsley


    1. Boil the water in a pot. Put in the ikan bilis and boil for 20 minutes under medium heat.
    2. While waiting for the water to boil, mix the egg, dried prawn and salt.
    3. Heat the oil in a pan and fry the ginger. When it is fragrant, pour the egg mixture onto the pan and fry until it is cooked.
    4. Remove the omelette and cut it into strips.
    5. When the water in the pot has boiled, remove the ikan bilis and put in the mee suah, egg and Chinese parsley. Allow it to cook until the mee suah is soft. Serve.
