About this recipe: The deep-fried whitebait topping gives the simple vegetable dish some crunch as spinach is usually very soft and fine.

  • 2 tbsp oil
  • 2 cloves garlic, chopped
  • 400g spinach
  • A handful of thin carrot strips
  • A pinch of salt
  • 100ml water
  • 3 tbsp deep-fried whitebait


  1. Heat the oil and fry the garlic under medium heat until it starts to brown.
  2. Add in the spinach and carrots. Fry for 1-2 minutes, then add some salt.
  3. Pour in water and cover the pan with a lid. Allow it to sit for 30 seconds. Turn off heat and plate.
  4. Top with deep-fried whitebait. Serve.
