Creamy broccoli & cauliflower

    • ½ cup (125 ml) carrot juice
    • 3 tablespoons light sour cream
    • 2 cups (150 g) broccoli florets
    • 2 cups (210 g) cauliflower florets

    1. Bring the carrot juice to the boil in a small saucepan over high heat. Leave on the boil until reduced by about half, about 8 minutes. Remove from heat. Whisk in sour cream.
    2. Steam broccoli and cauliflower until crisp-tender, about 5 minutes. Transfer to a serving dish. Serve with the sour cream sauce.
