    About this recipe: This is a very simple dish that has a bitter taste. It can be eaten with rice or porridge.

    Serves: 5 

    • 3 eggs, beaten
    • 125g bittergourd, seeds and skin removed, sliced thinly
    • a pinch of salt

    1. In a frying pan, fry bittergourd under medium heat until it is soft.
    2. Mix the eggs and salt together in a small bowl.
    3. Pour the eggs out on top of the bittergourd. Allow it to cook for 1-2 minutes or until the base has set. Gently lift the omelette and flip it over. Allow it to cook until it is golden. Serve.
