About this recipe:
This is a very simple dish that has a bitter taste. It can be eaten with rice or porridge.
3 eggs, beaten
125g bittergourd, seeds and skin removed, sliced thinly
a pinch of salt
- In a frying pan, fry bittergourd under medium heat until it is soft.
- Mix the eggs and salt together in a small bowl.
- Pour the eggs out on top of the bittergourd. Allow it to cook for 1-2 minutes or until the base has set. Gently lift the omelette and flip it over. Allow it to cook until it is golden. Serve.
