Japanese curry with chicken

    Japanese curry mix can be found easily at any of the supermarkets in Singapore. Chicken can be omitted if vegetarian.

    Serves: 5 

    • 1 yellow onion, sliced
    • 300g chicken breast meat, cubed
    • 3 carrots, cut 1 cm thick
    • 2 potatoes, cubed
    • 6 cubes Japanese curry mix
    • 1000ml water

    1. In a hot oiled wok, fry the yellow onion under medium heat until fragrant and slight charred.
    2. Put in the chicken breast meat and cook until it turns white and is slight browned.
    3. Add in the carrots and potatoes. Stir-fry to mix.
    4. Add in the Japanese curry mix and water. Stir until it dissolves. Lower the heat and cover the wok with a lid. Allow the water to boil. Cook until the potatoes are completely cooked and soft. Serve.
