About this recipe: This is a typical Singaporean dish that many people like to eat. If it is too spicy, add less curry paste into the dish.

Serves: 5 

  • 800g fish head
  • 150g ready-made curry paste (eg. Instant Assam Curry Paste)
  • 3 ladyfingers, blanched and cut into pieces
  • 1/2 bringal, blanched and cut into pieces
  • 1 lemongrass
  • 1 assam slice
  • 1 onion, sliced
  • 1 tomato, cut into eighths
  • water

Prep:20min  ›  Cook:30min  ›  Ready in:50min 

  1. Steam the fish head for 10 minutes.
  2. In a frying pan, fry the curry paste until fragrant. Remove from pan.
  3. In a large pot, add the fish head, curry paste and all other ingredients. Add just enough water to cover the fish head. Cook under high heat for about 10-15 minutes. Serve.
