    About this recipe: Roti paun are small little buns have butter filling and this is one of the specialty foods in Kuala Terengganu. Try to wrap the butter filling nicely at the center of dough ball otherwise you will see melted butter came out from the bottom of bread. But it is ok if this happened as that one bought by my SIL also have same problem, hehehe..Or you can even omit the butter filling, but I prefer with butter filling as it taste buttery and nice.

    Ingredients
    Makes: 18 buns

    • To prepare gelatinized dough
    • 100g bread flour
    • 70ml boiling hot water
    • To prepare basic sweet bread dough
    • 100g plain flour
    • 80g sugar
    • 1 tbsp instant yeast
    • 1/2 tsp salt
    • 175ml cold milk
    • 1 cold grade A egg
    • 60g cold butter, cubed
    • To prepare butter filling
    • 100g butter, room temperature
    • 80g coarse sugar

    Directions
    Prep:1day  ›  Cook:2hr  ›  Ready in:1day2hr 

      To prepare gelatinized dough:

    1. Place 100g bread flour in a mixing bowl. Add hot boiling water and mix with wooden spoon to form a rough dough.
    2. Cover bowl with cling film and leave dough to cool in the fridge for at least 1 hour, and up to 48 hours. This forms a gelatinised dough.
    3. To prepare basic sweet bread dough:

    4. Preheat oven at 180C.
    5. Combine 300g bread flour, 100g plain flour, sugar, yeast and salt together in a mixing bowl.
    6. Tear the gelatinized dough into pieces and add to the bowl along with 1 egg.
    7. Using a stand electric mixer, mix on low speed, adding cold milk gradually.
    8. Mix until dough is well combined and leave the sides of bowl.
    9. Add in the cold butter cubes and mix on medium speed until dough is smooth.
    10. Shape dough into a ball, leave to proof for 40mins or until doubled. This forms the sweet bread dough.
    11. To prepare butter filling:

    12. Mix room temperature butter and coarse sugar in a small bowl, stir to combine. Place in the fridge (to harden) before use.
    13. To assemble roti paun:

    14. Divide the basic sweet bread dough into 30g portions and mould into round balls.
    15. Spoon 1tsp of butter filling and wrap inside the small dough ball.
    16. Place dough ball in a greased 9” round cake tin (removable base). Once completed, set aside to rest for 15mins.
    17. Beat one egg with 1 tbsp water to form egg wash. Brush buns with egg wash.
    18. Bake for 20-25 mins.
