    Ingredients
    Serves: 4 

    • 1 tbsp olive oil
    • 1 clove garlic (crushed)
    • 1 tbsp fresh coriander (chopped)
    • 1 tsp chilli powder
    • 1 onion (chopped)
    • 1 potato (chopped)
    • 3 carrots (chopped)
    • 4 cup vegetable stock

    Directions
    Prep:15min  ›  Cook:45min  ›  Extra time:1hr  ›  Ready in:2hr 

    1. Heat olive oil in a large pot over medium heat.
    2. Add garlic, onion, coriander and chilli and gently cook until onion is soft.
    3. Add carrots and potato and cook 5 minutes.
    4. Pour in vegetable stock and simmer for 45 minutes.
    5. With a hand blender, blend until smooth.
    6. Serve in seperate small bowls.

    Serving suggestion

    You can add salt and pepper. Top with coriander and drizzle with cream.
