Cut the dried tofu into thin slices. Discard the roots from the celery and wash the stems thoroughly. Cut the celery crosswise into short sections. Rinse the spring onion and finely chop.
Blanch the celery in boiling water for 1 minutes and drain.
Heat 2 tablespoons vegetable oil in a frying pan. Add the dried chilli pepper and stir for a few times. Add the spring onion and stir-fry until fragrant. Add the celery and stir-fry for about 2 minutes.
Add the dried tofu and stir-fry for 2 minutes. Season with cooking wine, salt and MSG. Transfer to a serving dish.
