Simple Egg Fried Rice

    A simple fried rice dish that is good as a base where you can add other ingredients like mised veges or just serve as it is. Quick and easy for the kids.

    Ingredients
    Serves: 2 

    • 2 tablespoons oil
    • 2 cloves garlic, sliced
    • 1 carrot, cut into matchsticks
    • 4 spring onions, sliced
    • 1 large egg, whisked
    • 1 large bowl cooked or leftover rice
    • 2 tablespoons dark soy sauce

    Directions
    Prep:10min  ›  Cook:10min  ›  Extra time:15min  ›  Ready in:35min 

    1. Heat up the oil to a medium heat. Add garlic and fry until golden. Add the carrot to the garlic and fry for 3-4 minutes then add the spring onion. Fry for a further minute then add the egg and stir into the vegetables.
    2. When the egg is cooked add the cooked rice and combine with the vegetables and egg.
    3. Add the soy sauce to coat the rice and serve.

    Used different ingredients. Added sliced mushrooms, frozen garden peas, frozen sweetcorn, sauteed red pepper & a drizzle of toasted sesame oil. You can also add cubed Bacon grill & prawns for a more substantial main course.  -  20 Feb 2010  (Review from Allrecipes UK | Ireland)

    Great recipe - quite suprised someone else found this challenging!! I think getting your wok hot is the key though - did this with vegetable and cashew nuts main dish, delicious. Thanks!
