    About this recipe: A refreshing Indian salad that is the perfect complement to a curry meal. The peanuts add a wonderful nuttiness to this simple and tasty salad.

    Serves: 4 

    • 220 g grated carrots
    • 75 g chopped salted peanuts
    • 45 ml lemon juice
    • 3 g salt
    • 4 g white sugar
    • 1 green chile pepper, seeded and diced
    • 6 g finely chopped fresh cilantro

    1. In a serving bowl, toss together the carrots and peanuts. In a separate bowl, whisk together the lemon juice, salt, sugar, chilli and coriander. Pour over the carrots and stir gently to coat. Serve immediately.
