Gujarati Carrot and Peanut Salad

    A refreshing Indian salad that is the perfect complement to a curry meal. The peanuts add a wonderful nuttiness to this simple and tasty salad.

    Ingredients
    Serves: 4 

    • 220 g grated carrots
    • 75 g chopped salted peanuts
    • 45 ml lemon juice
    • 3 g salt
    • 4 g white sugar
    • 1 green chile pepper, seeded and diced
    • 6 g finely chopped fresh cilantro

    Directions

    1. In a serving bowl, toss together the carrots and peanuts. In a separate bowl, whisk together the lemon juice, salt, sugar, chilli and coriander. Pour over the carrots and stir gently to coat. Serve immediately.

    i was very dubious of this recipe, but i had all the ingredients, so i tried it and was so pleasantly surprised! i added mint instead of cilantro, because that's what i had, and the mint-carrot-peanut combination is much greater than the sum of its parts. try it, i bet you'll like it too!  -  03 Apr 2008  (Review from Allrecipes US | Canada)

    Very nice salad to serve with spicy curry dishes. I followed the recipe exactly, but instead of adding dressing right before serving, next time I will add and let chill for a few hours in refrigerator.
