220 g grated carrots
75 g chopped salted peanuts
45 ml lemon juice
3 g salt
4 g white sugar
1 green chile pepper, seeded and diced
6 g finely chopped fresh cilantro

In a serving bowl, toss together the carrots and peanuts. In a separate bowl, whisk together the lemon juice, salt, sugar, chilli and coriander. Pour over the carrots and stir gently to coat. Serve immediately.
