    About this recipe: Crisp cos lettuce and sweet orange slices are tossed with a light honey vinaigrette.

    Serves: 8 

    • 60 ml red wine vinegar
    • 180 ml vegetable oil
    • 15 ml honey
    • 3 g salt
    • 0.5 g ground black pepper
    • 25 g chopped green onion
    • 1 large head romaine lettuce, torn into bite-size pieces
    • 288 g oranges, peeled and thinly sliced60 ml red wine vinegar

    1. In a small container with a tight-fitting lid, combine the vinegar, oil, honey, salt, pepper and spring onion. Close the lid and shake vigorously to blend.
    2. Place the cos lettuce into a large serving bowl. Drizzle over vinaigrette and toss to coat. Add orange slices and toss gently. Serve immediately.
