About this recipe: While teaching English in Asia the past several years, I've been lucky to exchange some recipes with local people . This Vietnamese Sandwich -banh-mi - is awesome. If you've got a local Vietnamese bakery get the bread rolls from there.


Serves: 4 

  • 4 boneless pork loin chops, cut 6mm thick
  • 740 g boneless pork loin chops, cut 1/4 inch thick
  • 4 (7 inch) French bread baguettes, split lengthwise
  • 20 ml mayonnaise, or to taste
  • 30 g chile sauce with garlic
  • 60 ml fresh lime juice
  • 1 small red onion, sliced into rings
  • 200 g cucumber, peeled and sliced lengthwise
  • 6 g chopped fresh cilantro
  • salt and pepper to taste

  1. Preheat the oven's griller without the griller pan. Place the pork chops on the griller pan and set under the griller. Cook for about 5 minutes on each side turning once until browned on each side.
  2. Open the French rolls and spread mayonnaise on the insides. Place one of the cooked pork chops into each roll. Spread chilli sauce directly on the meat. Sprinkle with a little lime juice and top with slices of onion, cucumber, coriander, salt and pepper. Finish with another quick drizzle of lime juice.
