Pinch of salt
90 g butter
90 g lard or white vegetable fat
About 4 tablespoons chilled water, to mix

To make the pastry, sift the ﬂour and salt into a mixing bowl, rub in the fats until the mixture resembles ﬁne breadcrumbs, then mix to a ﬁrm dough with the chilled water. Wrap and chill the dough while preparing the ﬁlling. Preheat the oven to 220°C and bake according to recipe requirements.
