    About this recipe: A very easy bread. Best if made the day before, or several hours before serving. If you can't find buttermilk, combine 2 tablespoons lemon juice with enough milk to make up 480 ml of liquid in a measuring cup.

    Serves: 12 

    • 375g plain flour
    • 1 tablespoon baking powder
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 65g sugar
    • 1 egg, lightly beaten
    • 480ml buttermilk
    • 60g butter, melted

    1. Preheat oven to 160 degrees C. Grease a 12x23cm loaf tin.
    2. Combine flour, baking powder, baking soda, salt and sugar in a large bowl. Blend egg and buttermilk together in a separate bowl, and add all at once to the flour mixture. Mix just until moistened. Stir in butter. Pour batter into loaf tin.
    3. Bake for about 1 hour, or until a skewer inserted into the centre comes out clean. Cool on a rack. Wrap in a clean kitchen towel for several hours, or overnight, for best flavour.
