About this recipe:Thai flavours make these burgers absolutely delicious. Serve on warmed buns with sweet chilli sauce and coconut-mint mayonnaise.
250g (1 cup) mayonnaise
4 tablespoons desiccated coconut
small handful chopped mint
1kg minced chicken
250g fresh breadcrumbs
1/2 cup Thai peanut sauce
2 tablespoons Thai red curry paste
2 spring onions, finely chopped
2 tablespoons finely chopped parsley
2 teaspoons soya sauce
3 cloves garlic, finely chopped
2 teaspoons lemon juice
2 teaspoons lime juice
1 tablespoon hot sauce, such as Tabasco
8 burger buns, split and toasted

To make coconut-mint mayonnaise: In a small bowl, mix together mayonnaise, coconut and mint. Cover, and refrigerate for at least 1 hour.
To make burgers: In a large bowl, mix together chicken, breadcrumbs, peanut sauce, curry paste, spring onions, parsley, soya sauce, garlic, lemon juice, lime juice and hot sauce. Be careful not to over-mix or the burgers will be tough. Divide into 8 equal balls and flatten into patties about 2.5cm thick.
Preheat the barbecue for medium-high heat. Lightly oil the cooking grate. Barbecue burgers for 6 to 8 minutes each side, or until well done. Serve on toasted buns with coconut-mint mayonnaise.
