Thai-Inspired Chicken Burgers

    Thai flavours make these burgers absolutely delicious. Serve on warmed buns with sweet chilli sauce and coconut-mint mayonnaise.

    Ingredients
    Serves: 8 

    • Coconut-mint mayonnaise
    • 250g (1 cup) mayonnaise
    • 4 tablespoons desiccated coconut
    • small handful chopped mint
    • Burgers
    • 1kg minced chicken
    • 250g fresh breadcrumbs
    • 1/2 cup Thai peanut sauce
    • 2 tablespoons Thai red curry paste
    • 2 spring onions, finely chopped
    • 2 tablespoons finely chopped parsley
    • 2 teaspoons soya sauce
    • 3 cloves garlic, finely chopped
    • 2 teaspoons lemon juice
    • 2 teaspoons lime juice
    • 1 tablespoon hot sauce, such as Tabasco
    • 8 burger buns, split and toasted

    1. To make coconut-mint mayonnaise: In a small bowl, mix together mayonnaise, coconut and mint. Cover, and refrigerate for at least 1 hour.
    2. To make burgers: In a large bowl, mix together chicken, breadcrumbs, peanut sauce, curry paste, spring onions, parsley, soya sauce, garlic, lemon juice, lime juice and hot sauce. Be careful not to over-mix or the burgers will be tough. Divide into 8 equal balls and flatten into patties about 2.5cm thick.
    3. Preheat the barbecue for medium-high heat. Lightly oil the cooking grate. Barbecue burgers for 6 to 8 minutes each side, or until well done. Serve on toasted buns with coconut-mint mayonnaise.

    This recipe was fantastic and I highly recommend it. The coconut (barring allergy of course) is a must to cool the heat of the hot sauce and curry paste and the blend of flavors was perfect. What an adventure to find these ingredients, though!
