    About this recipe: This is the recipe for my grandma's rice and being Mexican, this is about as authentic as you can get. Makes a great side dish for barbecued meat or vegetables. Sometimes I add corn or any other spare vegetables I have to this as well.

    Ingredients
    Serves: 8 

    • 2 tablespoons vegetable oil
    • 375g long grain rice
    • 250g Italian tomato pasta sauce or tomato puree
    • 1 teaspoon crushed garlic
    • 1/4 teaspoon salt
    • 1 teaspoon freshly ground black pepper
    • 1 teaspoon ground cumin
    • 4 1/2 cups water

    Directions

    1. In a medium saucepan, heat oil over medium heat. Add rice and cook for 5 minutes, stirring frequently.
    2. Reduce heat to low, and stir in tomato sauce, garlic, salt, pepper and cumin. Stir in water. Cover and cook for about 20 minutes.
