    About this recipe: Chocolate heaven: a cookie mixture around a chocolate centre. Divine straight from the oven or warmed up again in the microwave!

    Serves: 12 

    • 150g margarine or unsalted butter, at room temperature
    • 150g caster sugar
    • 1 medium egg yolk
    • 25g cocoa powder
    • 200g self-raising flour
    • 100-175g chocolate

    1. Preheat the oven to 190 degrees C
    2. In a bowl, cream the butter and sugar until pale and fluffy. Beat in the egg yolk.
    3. Sift the flour and cocoa powder into the mix, and stir in with a metal spoon.
    4. Mix the dough until it is well kneaded together. Cover and place in the fridge for 20 minutes.
    5. Break a walnut-sized piece of dough off, mould it into a ball, and flatten it out using the palm of your hand to a 10cm circle.
    6. Place a few squares of chocolate into the middle and wrap up the cookie to form a ball-shaped parcel.
    7. Place on a tray and bake for 8-10 minutes - do not let the cookies get too dark.
    8. Leave to cool on the tray for 5 minutes and then carefully transfer to a wire rack to cool
    9. Delicious warm!
