Curried Lamb Chops with Mint Yoghurt

    A tasty Indian-style way to cook lamb chops. This recipe grills the chops but they can be also barbecued or fried.

    Serves: 4 

    • 8 lamb chops (about 90g each)
    • 1/4 cup your favourite bottled Indian curry paste
    • 200ml yoghurt
    • 1 tablespoon lime juice
    • 3 tablespoon chopped fresh mint plus a few sprigs for garnish
    • Salt to taste

    1. Brush the lamb all over with the curry paste. Cover and marinate at room temperature 20 minutes. Meanwhile, combine the yoghurt, lime juice, mint and salt in a bowl; cover and refrigerate until the lamb is ready.
    2. Turn on the grill to medium high and cook 3-4 minutes per side, or until cooked to your liking. Serve the chops with the yoghurt alongside for dipping.
