    About this recipe: A delicious recipe, if you are like me and love apples and walnuts.

    Ingredients
    Serves: 8 

    • 250g plain flour
    • 2 teaspoons ground cinnamon
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 300g caster sugar
    • 1 teaspoon vanilla essence
    • 3 tablespoons water
    • 200ml light oil
    • 3 eggs, lightly beaten
    • 3 apples, peeled, cored and quartered
    • 125g chopped walnuts

    Directions
    Prep:10min  ›  Cook:50min  ›  Ready in:1hr 

    1. Pre-heat oven to 190 degrees C.. Grease a 23cm cake tin.
    2. Sift together the flour, cinnamon, baking soda and salt. Add in sugar, vanilla, water, oil and eggs; mix until well-blended. Stir in apple quarters and chopped walnuts.
    3. Pour into tin and bake for 50 minutes or until a knife inserted into the middle comes out clean.
    4. Cool on a wire rack before serving.

    My entire family loved this, it went in a matter of a day. I didn't think there was so much oil needed however as I only used 100ml. I also added in Mixed Spice instead of cinnamon as it gave the cake a warm essence to it! Just keep on adding the spice until you can taste it as two teaspoons of ground cinnamon simply isn't enough!     . Great cake. i improvised a little by using less sugar and adding chopped mixed nuts. I don't think you need so much sugar, I used 250g instead of 300g  -  26 Jul 2011  (Review from Allrecipes UK | Ireland)
