Cheesy jacket potatoes

    This is the first recipe I learnt in Home Economics and it's easy!!There is no baking involved so these are much quicker. You boil the potatoes first, then make the filling, then put them under the grill. Pure comfort food!

    Ingredients
    Serves: 4 

    • 4 large baking potatoes
    • 4 tablespoons butter
    • 250g aged Cheddar cheese, grated
    • 1 onion or 4 spring onions, thinly diced
    • Salt and pepper

    Directions
    Prep:5min  ›  Cook:20min  ›  Extra time:5min  ›  Ready in:30min 

    1. Wash the potatoes, cut in half lengthwise but don't peel them. Place in a pan of boiling salted water and cook until medium soft.
    2. Drain and remove them from the water. Scoop out the "flesh", taking care not to split the skin. Put the skin to one side, don't throw away.
    3. Place the flesh into a mixing bowl, add the butter, sliced onion and half of the cheese. Mix well.
    4. Then put the mixture into the skins. sprinkle the rest of the cheese on the top and place under the grill for 2 minutes or until cheese is melted and bubbling.
    5. Serve and enjoy.

    Very nice, I had to use cheese sauce as I didn't have enough cheese, if you do this don't use all the cheese sauce as the filling becomes runny!!  -  13 Jul 2012  (Review from Allrecipes UK | Ireland)
