Zesty Coconut Cake

    This is a tasty recipe which I think will add zest to your day. It has coconut with a hint of lime - enjoy!

    Serves: 6 

    • 250g flour
    • ½ teaspoon salt
    • 2 teaspoons baking powder
    • 90g margarine or butter
    • 90g sugar
    • 60g desiccated coconut
    • ½ teaspoon finely-grated lime rind
    • 1 egg
    • 125ml milk
    • 1 teaspoon vanilla essence

    1. Sift flour, salt and baking powder together into a bowl.
    2. Rub in the margarine until mixture looks like fine breadcrumbs. Add sugar, coconut and lime zest.
    3. Beat egg and add most of the milk and vanilla essence.
    4. Make a well in centre of flour mixture. Add liquid and mix well to form a stiff consistency, adding more milk if necessary.
    5. Place in a greased 15cm cake tin and bake at 180 degrees C for 40 minutes, or until a skewer inserted in the middle comes out clean.
    6. Remove cake from tin and cool on wire rack.
