Lo Shi Fun with Minced Pork(Teardrop Rice Noodles)

    Lo shi fun noodles are stubby rice noodles and this dish has simple flavours, suitable for kids and for the family.

    Serves: 6 

    • 500 g lo shi fun
    • 350 g minced pork
    • 2 stalks choy sum, cut
    • 2 garlic cloves, minced
    • 2 eggs, beaten
    • 1 tsp oyster sauce
    • 2 tsp light soy sauce
    • 1 tsp chinese cooking wine
    • salt and white pepper to taste
    • oil for cooking
    • 10 g fried shallots for garnishing

    1. Blanch the noodles in hot water until soft, drain and set aside.
    2. Heat 1 tbsp oil in wok, saute minced garlic and pork together. Add the oyster sauce, soy sauce, cooking wine and stir-fry. Put the cut choy sum and stir-fry for about 2 minutes then add the noodles.
    3. Pour the beaten eggs in and stir-fry all the ingredients together until egg is cooked. Season with salt and pepper. Serve and garnish with fried shallots.
