About this recipe:Chunky peanut butter, garlic, fresh ginger and coriander blended into an exotic Asian-style dipping sauce or marinade. Great for satay. Use sweetened or unsweetened peanut butter, depending on your preference.
1/2 cup (155g) chunky peanut butter
1/2 cup (120ml) vegetable oil
4 tablespoons (60ml) rice wine vinegar
4 tablespoons (60ml) soya sauce
4 tablespoons (60ml) fresh lemon juice
4 cloves garlic, crushed
10 sprigs fresh coriander, finely chopped
2 teaspoons dried crushed chillies
2 teaspoons finely grated fresh ginger

In a food processor, thoroughly blend all ingredents until smooth. Cover, and refrigerate until serving.
