    About this recipe: Chunky peanut butter, garlic, fresh ginger and coriander blended into an exotic Asian-style dipping sauce or marinade. Great for satay. Use sweetened or unsweetened peanut butter, depending on your preference.

    Ingredients
    Serves: 16 

    • 1/2 cup (155g) chunky peanut butter
    • 1/2 cup (120ml) vegetable oil
    • 4 tablespoons (60ml) rice wine vinegar
    • 4 tablespoons (60ml) soya sauce
    • 4 tablespoons (60ml) fresh lemon juice
    • 4 cloves garlic, crushed
    • 10 sprigs fresh coriander, finely chopped
    • 2 teaspoons dried crushed chillies
    • 2 teaspoons finely grated fresh ginger

    1. In a food processor, thoroughly blend all ingredents until smooth. Cover, and refrigerate until serving.
