Garlic Bell Pepper Vinaigrette

    A home-made vinaigrette with fresh bell peppers, garlic, and basil - that's easy to make. Taste's great on pasta salads.

    Serves: 12 

    • 1/2 red bell pepper, diced
    • 4 cloves garlic, finely chopped
    • 1 tablespoon dried parsley
    • 4 fresh basil leaves, chopped
    • 2 tablespoons olive oil
    • 1/2 cup Italian salad dressing
    • 1 cup red wine vinegar
    • salt and pepper to taste

    1. Choose a clean bottle or jar with a well fitting lid or cork. Put the peppers, garlic, parsley, and basil into the jar or bottle. Pour in olive oil, italian dressing, and red wine vinegar. Season with salt and pepper to taste. Cover with lid, shake well to mix, and refrigerate at least 2 days to allow flavors to develop.

    For all of the extra ingredients, this isn't much better than just using Italian dressing by itself. The vinegar is a little overpowering. The chopped basil did help a lot.  -  20 Aug 2005  (Review from Allrecipes US | Canada)

    I added a little bit of yellow bell pepper to make up for the lack of red bell I had I liked it but I do think it got better with time. Let it go three days. That last day for me took the bottle taste out of the Italian dressing and incorporated the fresh basil just so that it tasted like a 100% homemade dressing.  -  28 Nov 2015  (Review from Allrecipes US | Canada)
