About this recipe: Blue cheese and head cheese are tossed in a flavorful Dijon vinaigrette dressing with onion and garlic. Head cheese is not a dairy cheese but cold meat jelly made from pig or calf's head meat.


Makes: 8 servings

  • 60 g finely chopped onion
  • 8 g finely chopped garlic
  • 60 ml prepared Dijon-style mustard
  • 30 ml red wine vinegar
  • 120 ml olive oil
  • 455 g blue cheese, crumbled
  • 455 g head cheese, diced
  • salt and pepper to taste

  1. In a large serving bowl, mix together the onion, garlic, mustard, red wine vinegar, and olive oil until well blended. Add the blue cheese and head cheese; toss until well coated. Season with salt and pepper to taste. Chill until serving.
