Japanese-Style Grilled Mushrooms

    Flat mushrooms are flavoured with sesame oil, soya sauce, and ginger before being grilled until soft.

    • 4 portobello mushroom caps
    • 3 tablespoons soya sauce
    • 2 tablespoons sesame oil
    • 1 tablespoon minced fresh ginger root
    • 1 small clove garlic, minced

    1. Preheat the oven's broiler and set the oven rack about 15cm from the heat source.
    2. Wash the mushrooms; arrange on a baking tray with top side of the mushroom facing down. Whisk together the soya sauce, sesame oil, ginger, and garlic in a small bowl; brush the mixture evenly over the mushrooms.
    3. Roast the mushrooms under the broiler until soft, about 10 minutes.

    This recipe didn't really work out. I didn't know if the Broiler should be on high or low, then when I did put it on high, it almost started on fire! And it still wasn't cooked through. Then I tried again, this time with the broiler on low, and after 20 minutes of cooking, it wasn't cooked through. Maybe my mushrooms were too big. The sauce it made, on the parts that were cooked, tasted good, I guess it'll just take some tweaking to get it right.  -  23 Feb 2009  (Review from Allrecipes US | Canada)


    I loved these! The only reason I am giving a 4 instead of a 5 is that 2 tablespoons of sesame oil was a bit overpowering and needs scaled down in my opinion. The recipe also doesn't state to set the broiler on high or low but I found low to work great.
