In a mortar and pestle, smash the black peppercorns until rough ground, then add the garlic cloves and smash until well broken up. Then add the coriander root and continue to smash until fairly smooth. Mix in the salt.
Mix in with the pork and marinate for 4 hours.
Fry the pork in oil until crispy and drain. Serve on a plate with the coriander sprigs on top.
