About this recipe: This is a Eurasian dish which is usually served during special occasions. It is very similar to Chinese soya sauce chicken except for the lime juice. Add some onions, green peas or fried potato wedges if desired for a one pot meal.

Serves: 4 

  • 1 (2kg) chicken, cut into small parts
  • 1 teaspoon ground pepper
  • 1 teaspoon dark soya sauce
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • Oil for frying
  • 60ml water
  • 60ml dark soya sauce
  • 3 limes, juiced
  • salt and pepper

  1. In a large bowl, combine the chicken with the pepper, 1 teaspoon dark soya sauce, salt and sugar. Marinate for about 30 minutes.
  2. In a large wok, heat the oil until hot and deep fry the chicken pieces until golden brown. Drain on paper towels.
  3. In a small saucepan, mix the water, dark soya sauce and bring to a gentle boil. Add the lime juice and season with salt and pepper to taste. Pour the gravy over the fried chicken and serve immediately with rice.
