Grilled Brinjal with Soya Sauce-Citrus Glaze

About this recipe: This is a very simple, healthy way to prepare brinjal. If you can find yuzu juice, use that instead of orange and lime juice. Try the marinade on all sorts of grilled vegetables like capsicum, onions or carrots at your next barbecue.

Serves: 4 

  • 3 tablespoons soya sauce
  • 2 tablespoons mirin or sherry
  • 2 tablespoons water
  • 1 tablespoon honey
  • 50 ml orange juice
  • 25 ml lime juice
  • 1 tablespoon finely chopped ginger
  • 4 brinjal, trimmed and sliced lengthwise
  • Salt and freshly ground pepper
  • Toasted sesame seeds

  1. Position a rack in the upper part of the oven and preheat the broiler. Line a roasting pan with foil.
  2. Combine all the ingredients except the brinjal, sesame seeds and salt and pepper in a saucepan and simmer for about 5 minutes, or until well blended. Let cool.
  3. Lightly score a diamond-like pattern into the flesh of the brinjal. Season the brinjal with salt and pepper to taste and brush with soya sauce marinade.
  4. Place the brinjal halves skin-side up on the prepared pan.
  5. Broil for 3 to 4 minutes on each side, basting with the marinade often. Sprinkle with sesame seeds and serve.
