Apple and Sweet Potato Casserole

    Serves 4-6. Orange and yellow fleshed sweet potatoes are preferred. For non-vegetarians, this dish goes well with crisp roasted meats.

    Serves: 6 

    • 900g sweet potatoes
    • 4 small apples, cored and sliced into rings
    • 2-3 tablespoons caster sugar
    • 2 tablespoons coarsely chopped pecan or cashew nuts
    • 50g butter
    • 1 teaspoon salt
    • pinch of grated nutmeg

    1. Place the whole sweet potatoes in a large saucepan, cover with boiling water, bring back to boil, lower heat and cook for 25-30 minutes or until barely tender.
    2. Rinse under cold water, peel and cut lengthwise into thick slices.
    3. Fill a greased ovenproof dish with alternate layers of sweet potato and apple and sprinkle with the sugar and nuts.
    4. Melt the butter in a small pan, season with the salt and nutmeg and pour over the sweet potato and apple mixture.
    5. Cook in a preheated oven, 200C (Gas 6) for 20-25 minutes. Serve immediately as a tasty vegetable dish.
