About this recipe: This must be every pork-consuming person’s favorite porky snack! This is a feeble attempt to recreate what street vendors have perfected. I think it’s not half bad, but I am open to suggestions of course…

Toi Bangkok (Krung Thep Maha Nakhon), Thailand

Serves: 4 

  • 500 grams fatty pork
  • 3 cloves garlic, finely minced
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 tablespoon fish sauce
  • 125ml coconut cream
  • 1 tablespoon vegetable oil
  • ¼ teaspoon white pepper, ground
  • 1 package short bamboo skewers

Prep:30min  ›  Cook:10min  ›  Ready in:40min 

  1. Soak the bamboo skewers in cold water.
  2. Slice the pork into 2 cm by 8 cm long pieces.
  3. Mix the rest of the ingredients in a bowl. Add the pork pieces and marinate a few hours or overnight.
  4. Thread the pork pieces onto the soaked skewers.
  5. Grill over a charcoal fire or alternatively in the oven broiler for a few minutes on each side, or until the meat is cooked through.
  6. Serve with lots of sticky rice.
