About this recipe: This beef snack is perfect for traveling. It goes well with sticky rice and some cut-up vegetables.

Serves: 6 

  • 1 kg beef, sirloin or another lean cut
  • 450 ml light soy sauce
  • 10 tablespoons palm sugar
  • 1 teaspoon white pepper, finely ground
  • 4 tablespoons coriander seeds, roughly crushed

  1. Slice the beef across the grain as thin as possible.
  2. Mix the soy sauce, palm sugar, white pepper powder and crushed coriander seeds. Heat until sugar dissolves, if necessary. Let cool, if heated up.
  3. Marinate the beef slices in the marinade for at least a couple hours or overnight.
  4. Dry the drained off pieces of meat on cooling racks in the hot sun (about a day) or in an oven heated to 150ºC (about 1-3 hours, depending on thickness) until dry and leathery, turning occasionally.
  5. To serve, shred and deep-fry.
