Thai-style baked coconut custard

    This is a basic coconut custard that is baked in an oven. It is baked in a square pan, then broiled to give it a caramelized top. It is then cooled and cut into squares.

    Serves: 6 

    • 375ml (1 1/2 cups) coconut milk
    • 5 eggs, beaten
    • 110g brown sugar
    • 100g white sugar
    • 2 tablespoons cream

    1. Preheat the oven to 175degrees Celsius.
    2. Combine coconut milk, eggs, brown sugar, white sugar and cream. Put the bowl over a double boiler and cook until the custard coats the back of a spoon, about 10-20 minutes.
    3. Pour the custard into a 22cm square pan and bake for about 30 minutes, or until the custard is done.
    4. Place under a broiler and broil until the top is golden brown. Let cool and cut into squares for all to enjoy.
