Steamed triple friend salad

    This is a very healthy composed salad with chicken, prawn and pork. If you are looking for something light but full of flavor, this is the recipe for you.

    Serves: 4 

    • For the dressing
    • 2 dried red chillies, reconstituted and chopped
    • 5 cloves garlic, sliced
    • 1 tablespoon palm sugar
    • 2 tablespoons fish sauce
    • 1 lime, juiced
    • 4 tablespoons tamarind juice
    • For the rest of the salad
    • 200 g boneless chicken, sliced and steamed
    • 200g prawns, shelled, deveined and steamed and sliced
    • 200 g lean pork, sliced and steamed
    • 1 stalk Chinese celery, chopped and divided
    • 1 small white radish, julienned finely
    • 1 medium carrot, peeled and julienned finely
    • 5 sprigs mint, picked and torn

    1. First, make the dressing by placing all of the dressing ingredients in a pot and bring to a boil. Turn off the fire and let cool to room temperature.
    2. Toss the meats separately with the dressing and Chinese celery and arrange in neat piles on a platter.
    3. Toss the radish and carrot with the dressing and place in the middle of the platter. Garnish with the mint and serve.
