Coconut milk and stewed sweet potatoes

    This hearty dessert is very easy to make. The recipe calls for soaking the sweet potato in hydrolyzed lime water. If you can't find lime powder, you can skip this step, but the sweet potato will be soft and the sauce will be very thick.

    Serves: 4 

    • 1 tablespoon white lime powder
    • 750ml (3 cups) water
    • 500 g sweet potato
    • 875ml (3 1/2 cups) coconut milk
    • 125ml (1/2 cup) coconut cream
    • 250 g granulated sugar
    • 1/2 teaspoon salt

    1. Dissolve the lime powder in the water and let sit for 30 minutes. Strain the water and reserve for the sweet potato.
    2. Peel and cut the sweet potato into bite sized pieces and soak in the lime water for 30 minutes. Remove the sweet potato and rinse well.
    3. Bring the coconut milk to a boil, reduce the heat to a simmer. Add the sweet potato and cook until tender. Add the sugar and salt and stir to dissolve.
    4. Add the coconut cream and heat through, do not boil, and remove from the heat.
    5. Place the sweet potatoes and coconut sauce into a bowl and serve.
