About this recipe: This beautiful and fresh salad is a great addition to your meal. Use any type of seafood you prefer. You can use scallops, clams, crab or even steamed chunks of fish.

Serves: 4 

  • 100g prawns, shelled
  • 200g mussels, rinsed and debearded
  • 100g squid, cleaned and scored
  • 5 cloves garlic, chopped
  • 5 Thai chillies, red or green, sliced thin
  • 1-2 limes, juiced
  • 2-3 tablespoons fish sauce
  • 1/2 teaspoon palm sugar
  • Handful of celery leaves, chopped
  • 2 shallots, sliced thin
  • 1 head crunchy lettuce, washed

  1. Quickly cook the seafood separately in seasoned boiling water. Shell the mussels and combine all the seafood together in a bowl.
  2. With a mortar and pestle, smash the garlic and chillies. Stir in the lime juice, fish sauce and palm sugar.
  3. Pour this dressing over the seafood. Add the celery leaves and sliced shallots. Toss gently.
  4. To serve, place the lettuce on a platter to make a bed. Place the seafood salad on top of the lettuce and serve.
