Pad king (Stir fried chicken with ginger)

    This is grandma's simple recipe that is so easy to make and pleases everyone, even the children. Serve on rice.

    Serves: 4 

    • 200 grams ginger, peeled and julienned
    • 1 cup salt
    • 2 tablespoons oil
    • 200 grams boneless chicken, sliced
    • 1-2 tablespoons fish sauce
    • 1-2 tablespoons soya sauce
    • 2 tablespoons cornstarch
    • 250ml water
    • 1 cup mushrooms, sliced
    • 1 spring onion

    1. In a bowl, mash the ginger and salt with your hands. Rinse and squeeze out the ginger and water with your hands.
    2. In a wok, heat the oil and add the chicken and brown. Add the ginger and stir fry until fragrant. Add the fish sauce and soya sauce and mix thoroughly.
    3. Make a cornstarch slurry by mixing the cornstarch with the water. Pour into the wok and stir until thickened, adding more water if needed.
    4. Add the mushrooms and spring onions and stir fry until the mushrooms are cooked.
    5. Serve with steamed jasmine rice.
