Pan Fried Chicken Goujons

    A basic, simple recipe but a real family favourite. I add a dessert spoon of cocoa powder to the flour and some freshly ground black pepper to spice up the breadcrumbs. Try this - trust me, it's good.

    Serves: 6 

    • 1 3/4 cup (200g) plain flour for coating
    • 1 dessert spoon cocoa powder
    • pinch of freshly ground black pepper
    • 900g (2lbs) chicken mini breast fillets
    • 1 egg, beaten
    • 2 cups (200g) fresh breadcrumbs
    • 2 tablespoons (30ml) olive oil for frying

    1. Mix flour, cocoa powder and pepper in a shallow dish or plate.
    2. One by one, coat mini chicken fillets in flour mixture, then dip in beaten egg, then in breadcrumbs.
    3. In a large frying pan heat oil over medium high heat.
    4. Shallow fry coated chicken pieces in oil until cooked through, approximately 5 minutes.
    5. Drain on kitchen roll and serve.
