About this recipe:What a refreshing, fiery twist on the classic, flat lemonade. Freeze some of this into ice cubes to use in the drinks, so it won't be diluted. Garnish with extra sliced lemons or use slices of lemon rind from the leftover juiced fruit.
600g caster sugar
3.5 litres (1 gallon) water
14 slices fresh root ginger
1 litre (4 cups) fresh lemon juice (about 12-15 lemons)

In a large saucepan combine sugar, water and ginger. Heat to boiling, stirring occasionally. Remove from heat.
Stir in lemon juice. Cool for 15 minutes. Remove ginger. Refrigerate lemonade at least 1 hour, or until chilled.
Serve over ice, if desired, and garnish with lemon slices.
