Sinigang (Pork spare ribs in sour soup)
This is a tangy, soupy meal-in-a-pot dish. It can serve as soup and a main dish complete with vegetables and is easy to do. Instead of pork, chicken and beef can be used as well.
6 people made this
1kg pork spare ribs
500ml (2 cups) water
1.5kg taro, peeled and cubed
1 medium onion, chopped
1 small piece ginger
1 small tomato, quartered
1 small white radish, peeled and chopped
4 tamarind seeds or 1 tablespoon tamarind powder
2 large green chillies
Salt to taste
1.5kg string beans
1 small eggplant (brinjal), chopped
- In a 6-litre pot, parboil the spareribs. Drain and rinse with cold water.
- Rinse the pot and combine the spareribs, water and all the ingredients except the string beans and eggplant.
- Boil the mixture until the pork is tender, about 30 min. Then add the string beans and eggplant.
- Strain the mixture and serve the soup in a soup bowl and arrange the meat and vegetables on a serving platter while hot. Serve with rice.

Sinigang doesn't require ginger and sinigang isn't sinigang without swamp cabbage.
