    About this recipe: This rich pork dish is usually prepared on special occasions or when expecting company.

    Serves: 10 

    • 1 kg boneless pork
    • 225 g pork liver
    • 2 cloves garlic, minced
    • 1 medium onion, diced
    • 3 tablespoons olive oil
    • Salt and pepper to taste
    • 2 medium sized tomatoes, diced
    • 1 (439 g) can chickpeas
    • 1 (42.5 g) box raisins
    • 2 medium sized potatoes, diced

    1. In a large pot, parboil the pork with water and some salt. Cool and dice into bite sized pieces. Set aside the pork and 1 cup broth.
    2. In the same pot, parboil the pork liver. Cool the liver, rinse and dice into bite sized pieces. Discard the broth.
    3. In a wok or skillet, saute the garlic and onion in olive oil. Add the pork and salt and pepper to taste, and continue cooking for 5 minutes.
    4. Add the tomatoes and pork broth. Cover and cook for 10 minutes.
    5. Add the liver, chickpeas, raisins and potatoes. Simmer 10 minutes or until the potatoes are done.
