Clams in Oyster Sauce

    Clams, such as Manila or baby clams, taste great cooked in oyster sauce and make a great appetizer.

    Serves: 4 

    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 2 tablespoons olive oil
    • 1 thumb sized piece ginger, peeled and shredded
    • 2 tablespoons oyster sauce
    • 125 ml (1/2 cup) water
    • 1 kg clams

    1. In a large pot, saute the onion and garlic in olive oil. Add the ginger, mix and cook for 2 minutes.
    2. Add the oyster sauce, mix, cover and cook for 2 minutes.
    3. Add the water, cover and cook for 2 minutes.
    4. Add the clams. Cover and cook for 5 minutes, or until all the clams are opened. Discard any that would not open. Serve immediately.
