Singkamas Salad

    This is a very cool and satisfying salad, terrific for picnics or any outdoor fun. Singkamas is also called bangkwang or jicama.

    Ingredients
    Serves: 10 

    • 1 large singkamas, cut into matchsticks
    • 1 red pepper (capsicum), sliced lengthwise
    • 1 green pepper, sliced lengthwise
    • 1 small red onion, sliced lengthwise
    • 2 green chillies, seeded, sliced lengthwise
    • 1 thumb sized ginger, sliced thin crosswise
    • 1 medium carrot, cut into matchsticks
    • 250ml (1 cup) water
    • 150ml (2/3 cup) vinegar
    • 2/3 cup sugar
    • 1 tsp salt

    Directions
    Prep:30min  ›  Extra time:1hr  ›  Ready in:1hr30min 

    1. Mix all ingredients in a large bowl. Refrigerate at least 1 hour or overnight.

    Altered ingredient amounts. I used about 5 slices of pickled Jalapeno from the fridge. I don't know if I had a large or small Jicama, but I used one that was about as big as a granny smith apple. I used 2/3 of the called for liquids and still had lots left over. I made a second recipe of cut up ingredients and used the existing liquid. So I'd say 1/2 of the liquids is plenty. I finely chopped the ginger. We were in a hurry and ate it right away without the one hour wait. EXCELLENT Recipe. We will definitely be eating this again!  -  15 Jan 2011
