Mike's tomato Glazed Meatloaf

    Everybody loves meatloaf, its just a big burger at the dinner table! This version has a sweet spicy tomato sauce that makes it perfect for the winter months

    Serves: 4 

    • For the Meatloaf
    • 300g to 400g minced beef
    • 1/2 cup milk
    • 1 egg
    • 1 tsp beef stock powder
    • 1 tsp ground pepper
    • 1/2 tsp paprika
    • pinch chili powder
    • 1 small onion finely diced
    • 1/4 tomato sauce
    • 1/2 cup breadcrumbs
    • For the Glaze
    • 1/4 cup tomato sauce
    • 1/4 cup sugar
    • 1 tsp beef stock powder
    • 1/4 cup boiling water
    • 1/4 tsp paprika
    • pinch chili powder

    1. To make the meatloaf, place the all the ingredients in a large bowl one by one mixing thoroughly with each addition. Hint - add the breadcrumbs last!
    2. Place in a loaf tin or similar and cover with foil. Bake in the preheated oven at 180 degrees C for one hour.
    3. To make the glaze, beat all the ingredients together until combined.
    4. Remove the foil from the meatloaf.
    5. Pour the glaze over the meatloaf and continue to bake for another 10 to 30 minutes.
    6. Remove from the over, and allow to stand for at least 5 minutes. Slice into hearty portions and serve.
    7. Leftovers make great cold sandwiches!

    I tweaked the recipe slightly (reduced the amount of sugar, added grated mild cheddar cheese and a dash of Worcestershire Sauce to both the loaf and glaze), but pretty much followed everything exact.
