About this recipe: A quick chicken noodle dish - great for lunch or dinner. Can be served hot or cold.


Serves: 2 

  • 1 cooked chicken breast, diced
  • 2 tablespoons (30ml) soya sauce
  • 2 tablespoons (30ml) rice vinegar
  • ½ tablespoon caster sugar
  • 2 tablespoons (30ml) peanut oil
  • 3 spring onions, minced
  • 100g small dried noodles - cooked, drained (and chilled if serving cold.)

  1. In a small bowl combine the soya sauce, vinegar, sugar and peanut oil.
  2. In a medium sized bowl toss the dressing with the chicken, spring onions and cooked noodles.
  3. Serve warm or cold.
