Coconut avocado ice cream

    My mum loves avocados and coconut milk. Since we have an avocado tree and coconut cream on hand, I tried making this fusion ice cream and it's heavenly. The avocado lends a lovely, appetising colour, and it has the nice aroma of coconut. Kids love it too.

    Serves: 8 

    • 1½ (375ml) cups milk
    • 1 cup (250ml) coconut cream
    • 1/2 cup (110g) caster sugar
    • 2 medium sized avocados, peeled and pitted
    • ½ small lemon, juiced

    Prep:10min  ›  Cook:8hr  ›  Ready in:8hr10min 

    1. Puree milk, coconut cream, sugar, avocados and lemon juice in a blender until smooth. Pour into a bowl, cover, and refrigerate for several hours until cold. Freeze in an ice cream machine according to manufacturer's directions, then freeze overnight.
    2. Allow ice cream to soften in refrigerator for 10 minutes before serving.

    I love this. The avocado gives the ice cream a gorgeous pale green color and almost a "green" flavor as well—it tastes really fresh, not overpowering & vegetal. We used sweet coconut cream, like you'd use for mixed drinks.
