About this recipe:This is a simple yet extremely tasty and crusty way to serve boring lamb chops this Australia Day. Its only 5 mins to prepare which makes it ideal (and one of my favorite) dinner party dishes.
1 1/2 cups (150g) breadcrumbs
3 tbs mint jelly
4 lamb chops
1/2 tsp salt
1/2 tsp pepper
Directions Prep:5min › Cook:20min › Extra time:5min › Ready in:30min
Preheat oven to 190 degrees C
Place breadcrumbs & mint jelly in a bowl and mix until evenly mixed.
PLace lamb chops on a lightly greased oven tray, season with salt and pepper, then spoon 1/4 of the mixture onto each lamb chop patting it firmly onto the chop to ensure it holds down (should look a bit like stuffing but a little less moist)
Place lamb chops into oven for 20-25 mins or until cooked through.
