About this recipe: This is a simple yet extremely tasty and crusty way to serve boring lamb chops this Australia Day. Its only 5 mins to prepare which makes it ideal (and one of my favorite) dinner party dishes.


Serves: 4 

  • 1 1/2 cups (150g) breadcrumbs
  • 3 tbs mint jelly
  • 4 lamb chops
  • 1/2 tsp salt
  • 1/2 tsp pepper

Prep:5min  ›  Cook:20min  ›  Extra time:5min  ›  Ready in:30min 

  1. Preheat oven to 190 degrees C
  2. Place breadcrumbs & mint jelly in a bowl and mix until evenly mixed.
  3. PLace lamb chops on a lightly greased oven tray, season with salt and pepper, then spoon 1/4 of the mixture onto each lamb chop patting it firmly onto the chop to ensure it holds down (should look a bit like stuffing but a little less moist)
  4. Place lamb chops into oven for 20-25 mins or until cooked through.
  5. Serve immediately
